Crockpot Chicken Recipes with Frozen Chicken Breasts
This Sweet n Smoky Pulled Chicken is one of my all time favorite Crockpot Chicken Recipes with frozen chicken breasts! It couldn't be easier to make, and it's an awesome high protein meal. You can make it even healthier with some quick modifications.
Ingredients:
2 Packets of McCormick Sweet & Smoky Pulled Chicken Seasoning
1 can whole tomatoes (low sodium if you can find it)
1 jumbo yellow onion
1/8 cup Brown Sugar
1 bag of Frozen Chicken Breasts
Preparation:
1. Slightly thaw the frozen chicken breasts under hot water (while in bag).
2. Cut off any excess fat and cut chicken pieces into 1.5" pieces.
3. Peel and chop onion (rough chop is great).
4. Toss everything into your crockpot and cook on high setting for about 3-4 hours. Use 1 1/2 packets of the seasoning.
Tips
Like with any crockpot chicken recipes with frozen chicken breasts, you really have to experiment to tweak the recipe to your liking. The original recipe on the McCormick packet calls for a LOT more sugar as well as using ketchup (which is loaded with sugar itself). I cut the sugar down dramatically by using a can of whole tomatoes (with juice). The tomato juice combined with the onion allows you to eliminate the called for 1/2 cup of water.
After a couple hours you can begin to go in and start shredding the chicken apart using two forks. If you find more liquid than you like, simply allow this to cook without the crockpot cover. This allows the excess steam and liquid to evaporate which leaves you with a thicker "sauce."
Serve on steamed brown rice or a use it to make sandwiches!
