High Protein Muffins – Chocolate Muffin Recipe

High protein muffin recipesWe all want to build more muscle and stay (or get) lean.  But what if you’re like me and you like your desserts?  You can have the best of both worlds with these high protein muffins recipes!  A muffin can be the perfect little snack to make sure you’re getting your protein intake as well as satisfying your sweet tooth.  And what’s better than chocolate?!

Does a high protein muffin really exist?  In short, yes.  The one thing you have to be careful to watch however is the sugar content.  Lot’s of “low fat” or reduced calorie goodies are usually packed chock full of sugar.  You probably already know that sugary treats can be just as detrimental to your diet and body composition goals, as high fat foods.  If you’re a fan of our previous high protein blueberry muffin recipe, you’re going to love this one!

Chocolate High Protein Muffins

Here’s what you’ll need:

2 Eggs

2 tablespoons of cocoa powder

2-3 scoops of chocolate whey protein powder

1/2 teaspoon of baking soda

1/4 teaspoon of salt

1 cup of all purpose flour or almond flour

1/3 cup of stevia sweetener (you can experiment with this)

1/4 water

Combine all the ingredients and put in your muffin tin (use muffin cups).  Bake in a preheated oven for 25-30 minutes at 350 degrees.  You should get about 12 muffins from this recipe.

A couple things to note when you’re making high protein muffins:

-Experiment with the sweeteners.  I’m personally not a fan of hugely sweetened protein recipes.

-The amount of protein powder you use and the type of protein powder can affect the taste of the recipe.  Some protein powders are pretty sweet tasting themselves.  In addition some powders have additional ingredients in them that can effect the outcome of the muffins.

-I suggest using whatever protein powder you’d normally use for shakes, and modifying your recipes to work well with that specific product.  In addition you can experiment with using egg whites instead of whole eggs etc.

-You should expect your high protein muffins to have a heavier consistency than a regular muffin.  You just have to adjust to taste.
